Tip of the day:

I sold some fish to one of my regular customer this past weekend. He told me his grouper fillet, he had previously purchased, came out very dry. If you've had the same results, then you are overcooking your fish. Cut back on the time. These fillets, regardless of what kind they are, are very fresh and moist and will retain their moisture if cooked the proper amount of time. I have another tip provided by one of my customers. I have not tried it, but I will this week. They put a light coat of mayo on the fish regardless of the way they cook it to insure the moisture stays in the fish. Let me know if you try it.
