Tip of the day

Tip of the day comes from Robert Wells, retired chef. Many of you met Robert at the community dinner And man oh man, does he know his stuff. Check out this recipe he sent for Corvina (by the way, I know for a fact it is one of his favorite fishes). 


Recipes for Corvina would be any grouper recipe, since it tastes exactly like grouper.  This week, I prepared my Corvina, " En Pappillote. "  That's French for "In Paper."  You take a 24 inch piece of parchment paper, then lay the fish(1 inch thick-butterfly if necc.) on middle of paper.  Then, any fun toppings.  I use, 3 lemon wheels, fresh dill, 1TBSP butter, salt, pepper, garlic powder, and four ice cubes(for steam).  Then, simply fold the paper/fish into a little, leakproof package. Bake at 400 degrees for 30 minutes.  When serving, place package on plate, place in front of person.  Let them slowly pull open package, and be in awe of the delicious aroma, and beautiful fish!
