Covered skillet
3 tablespoons olive oil
1 lb filet fish
1/4 tsp salt
1/8 tsp blk pepper
1/2 cup coarsley chopped tomato
1 small garlic clove minced (optional)
2 tbsp thinly sliced fresh basil

Put 1 tbsp oil in a 10 inch skillet and add fish, turning to coat fish with oil on both sides. sprinkle with salt and pepper

Toss together tomato, garlic (if using), remaining tablespoon oil, salt pepper to taste in a bowl, then mound on fish.

Cover skillet with a tight fitting lid and cook fish over moderately high heat until just cooked through, about 8 minutes.
