2 leeks cleaned well and sliced thin (only use the bottom white part and discard the tough green tops)
1 large yellow or white onion chopped into small dice
8 cloves garlic minced
2 large cans crushed tomatoes
1 can tomato sauce
1 bottle clam juice
1 cup dry white wine
1 carton seafood stock
2 TBS dry Thyme
1 TBS dry Basil
2 TBS dry Oregano
2 Bay Leaves
I TSP red pepper flakes
Salt and pepper to taste

1 pound firm fish such as salmon, cod, halibut, grouper, snapper cut into cubes
1 pound peeled deveined shrimp
1 pound lobster meat
1 pound sea scallops cut into halves
1 bag mussels in shells or small clams
1/2 pound jumbo lump crab meat

Sauté leeks and onion in olive oil and butter until soft over medium heat
Add garlic and sauté 2 minutes
Add basil,thyme,oregano,bay leaves, red pepper flakes ,salt and pepper
Add crushed tomatoes, tomato sauce, white wine, clam juice
Store well
Bring to gentle boil
Reduce heat to simmer and cook for 2-3 hours stirring occasionally
Taste continually to see if more salt and pepper needs to be added

This mixture can be made hours in advance if you want.

To Serve:
Bring mixture up to boil then reduce heat to medium
Add all cubed fish cook 10 minutes stirring well
Add Shellfish-shrimp, lobster, scallops clams and mussels
Cook until shellfish is cooked and clams and mussels open

Serve in large bowls topped with jumbo lump crabmeat
Add red pepper flakes to taste

Serve with crusty bread or garlic bread to sop up sauce.

Can be reheated for leftovers.
