Sweet & Sour Glazed Golden Corvina

"What is Corvina," one might be inclined to ask. Well friends, let us tell you. Corvina is a beautiful, mild, white, flaky fleshed fish that lends itself really well to a wide variety of preparations and big bold flavors. This recipe uses bright flavors to help accentuate the fish and it's perfect for any quick weeknight meal.

INGREDIENTS:

  • 4 4-6oz Golden Corvina Fillets, skin off
  • 6oz Citrus Based Marmalade (Your Choice)
  • 2 Tablespoons of Apple Cider or Rice Wine Vinegar
  • Juice of one Lime
  • White Sesame Seeds
  • Salt to taste

DIRECTIONS:

  1. Combine marmalade, vinegar, and lime juice in a mixing bowl and stir to combine
  2. Dry fillets and season with salt. Place into a well greased glass baking dish and cover with the glaze
  3. Allow to marinate for 10-20 minutes
  4. Place into a pre-heated oven set to broil and cook for 8-10 minutes or until the fish is cooked through and the glaze begins to caramlize
  5. Remove from the oven and sprinkle with sesame seeds
  6. Serve with a side of rice and a green salad
