Grilled Corvina with Spicy Artichoke Relish

It’s hard to beat a nicely grilled piece of fish, but pair it with some nice Greek seasoning and a bright and spicy artichoke relish and you’ve really got something special. Add in some delicious roasted potatoes and/or some nice couscous and you've got a quick and easy meal that's ready and waiting to please!

This recipe will also work well with any thick fleshed white fish. Try it out with grouper, halibut, or even swordfish if you're looking to change things up a bit!

INGREDIENTS:

  • 4 4-6oz Corvina Fillets, skin on
  • 1 cup martinated artichokes, roughly chopped
  • 1 cup Mama Lil's Spicy Peppers, roughly chopped
  • 2 tablespoons sherry vinegar
  • Olive oil
  • Cavender's Greek Seasoning

DIRECTIONS:

  1. Add artichokes and Mama Lil's Spicy Peppers to a mixing bowl along with the sherry vinegar. Toss to combine and reserve until needed
  2. Generously coat the corvina with olive oil and the Cavender's Greek Seasoning
  3. Pre-heat grill to approximately medium-high heat and place seasoned fish fillet skin-side up. Grill fish for appximately 2-3 minutes and then flip and finish cooking skin-side down, approximately 2-3 minutes
  4. Serve fish topped with the spicy artichoke relish along with a side of couscous or roasted fingerling potatoes
