2tablespoonbeef tallow(or a neutral-flavored cooking oil)
1lbbroccoli florets(5-6 cups or 1 to 1½ crowns rinsed and chopped broccoli)
Instructions
Marinate The Beef
Mix the 2 tablespoon portion of 3 tablespoon cornstarch with an equal 2 tablespoons of cold water. Add the sliced 1-1½ lbs prime rib roast pieces and toss until well coated. Set aside.
Make The Beef Broccoli Sauce
Combine the sauce ingredients: ½ cup water, ½ tablespoon garlic, 1 tablespoon ginger, ⅓ cup soy sauce, 1 tablespoon sugar, ¼ cup oyster sauce, 1 teaspoon sesame seed oil, and the remaining 1 tablespoon of cornstarch in a small mixing bowl. Set aside.
Wok Fry The Beef & Broccoli
Melt the 2 tablespoon beef tallow in your wok over medium-high heat. Once sizzling, add the marinated beef strips.
Stir fry for 2-3 minutes until the beef is browned, but some medium-rare pink color remains. *See notes: If your broccoli is pre-cooked, your finishing time will be just minutes.
Add the chopped 1 lb broccoli florets and stir fry with the beef until tender-crisp, about 3 minutes.
Add Sauce, Cook, Then Serve
Whisk the sauce to combine, then pour over your stir fry. Mix and continue cooking for 2-3 minutes until the sauce thickens.
Serve immediately over rice or fried noodles and garnish with sliced green onions and sesame seeds if desired.
