3 cups zucchini unpeeled, chopped, small pieces (I use a food processor, do not over-process, you want small whole pieces)

I cup bisquick

1/2 cup oil

3 eggs

1/2 cup parmesan shredded or ground

1/2 cup swiss same as parmesan

1 chopped medium white onion

salt and pepper


Blend all ingredients in good size bowl

Pour in an oil coated loaf pan

Bake approx. 40 minutes at 375. The top should be golden brown.

Serve hot, but I love left over cold.

You can add sliced up hard boiled eggs if you like.
