8 Oz Flounder
1/2 cup mushrooms chopped
1 stalk celery minced
2-3 green onions
1 slice diet bread crumbed
1 tsp parsley minced
Lite salt
Pepper to taste

Spray pan with Pam, add onions and saute until clear, add chopped mushrooms and cook 5 minutes. Remove from head, add bread crumbs, celery, parsley, sale and pepper and mis well. Place mixture on flounder and bake in sprayed baking dish at 400 degrees for about 20 minutes or until done.
As our fish comes in minimum 1 lb filets, this recipe easily doubles. That's what I do. Of course, our fish is so fresh, it freezes just fine.
