Red Snapper (or grouper) with tomato and basil
Covered skillet3 tablespoons olive oil1 lb filet fish1/4 tsp salt1/8 tsp blk pepper1/2 cup coarsley chopped tomato1 small garlic clove minced (optional)2 tbsp thinly sliced fresh basilPut 1 tbsp oil in a 10 inch skillet and add fish, turning to coat fish with oil on both sides. sprinkle with salt and pepperToss together tomato, garlic (if using), remaining tablespoon oil, salt pepper to taste in a bowl, then mound on fish.Cover skillet with a tight fitting lid and cook fish over moderately high heat until just cooked through, about 8 minutes.
