Corvina Fish Recipe Baked In A Coconut Crust

Ingredients

  • Large Corvina fish filetsliced
  • 1cupPanco breadcrumbs
  • 1cupsweetened coconut shredded
  • 1/2cuplemon juiceuse freshly squeezed for more flavor
  • 1.5sticksbutter melted: Put asied 1/2 cup of melted butter for the baking dish coating
  • Salt & pepperto taste
  • Herbs like oregano, thyme, parsleyto taste

Instructions

  1. Heat oven to 360F (180C) to get it ready for the baking.

  2. Run cold water through the fish fillet.

  3. Spray fish fillet with lemon juice. It will help to get rid of any fishy smell and add a pleasant citrus aroma to your cooked dish.

  4. Mix breadcrumbs and shredded coconut in a bowl. Add all salt, pepper and spices you choose.

  5. Dip each corvina piece into the cup with melted butter.

  6. Coat each buttered corvina piece in dry mix of breadcrumbs and herbs.

  7. Use 1/2 cup of melted butter to coat a baking dish. I use ceramic dish. Metal is OK, too.

  8. Arrange all prepped corvina pieces in the baking dish. Add a few pinches of coconut to the top of the dish.

  9. Bake in oven for 30-40 minutes. Depending on the oven, you may remove baked filets when they are fully cooked. Make sure the middle of the fish is well-cooked.

  10. Serve with vegetables, fresh salads or enjoy as a stand-alone meal.
