Ingredients

  • 2-3 Walleye Fillets about 8 ounces total
  • 1/2 teaspoon sea salt
  • sprinkle freshly ground black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 cup fresh minced herbs parsley, basil, oregano
  • 1 lemon or 2-3 limes juiced
  • 2 tablespoons olive oil, avocado oil, or melted butter or ghee

Instructions

  1. Run your finger down the sides of your walleye fillets, checking for bones. Remove any with needle nose pliers (once you find one they should all be in a line and relatively easy to find).
  2. Rinse fillets and pat dry. Place on a plate or cutting board.
  3. Sprinkle both sides with sea salt and black pepper.
  4. In a bowl or on a small plate, combine smoked paprika, minced herbs, lemon juice, and olive oil.
  5. Rub herb mixture evenly into both sides of each fillet.
  6. Allow herb mixture to sit on the fillet while the grill pre-heats.
  7. Preheat grill to medium-high heat for 10 minutes.
  8. Once hot, gently place fish filets over heat and cook for 5-7 minutes per side.
  9. If sides start to brown but fish is still not cooked through, move to indirect heat (not directly over the burners).
  10. Remove onto a clean plate, sprinkle with additional salt if needed, and enjoy!
