1 lb. large shrimp, cooked, peeled and deveined. you can use them either with or without the tails.
Basic ingredients i used:
1 small red onion, thinly sliced or chopped.
2 & 1/2 t. capers
1/3 cup canola oil
1/4 cup white wine vinegar
1 tablespoon grated lemon rind
1 TB lemon
1 tablespoon Dijon mustard
1 TB hot sauce
1/2 t. salt
1/2 t. celery seed
Chopped fresh parsley
peppercorns or pepper
Other ingredients in the recipe that are not necessary and are a personal preference.
1 tablespoon white wine dash Worcestershire sauce
2 garlic cloves, pressed
1/4 cup or what ever you have of chopped fresh basil
yellow pepper sliced thin
Good to serve at cocktail party
Combine shrimp, onion and capers . In a jar with tight fitting lid,
combine all other ingredients
Shake well and pour over shrimp.
I marinate overnight or a good 24 hours, stirring throughout the day.
Tip: White wine vinegar or Champagne vinegar or fresh squeezed lemon is good as the acid because it does not discolor the shrimp like red wine would. it is not as strong also.
