Ingredients

2 pounds fresh grouper fillets

2 tablespoons lemon juice

½ cup grated Parmesan cheese

¼ cup butter, softened

3 tablespoons mayonnaise

1 dash hot pepper sauce (e.g. Tabasco™)

salt and pepper to taste

Paprika to sprinkle on top

* Ellen added Tony Sachers seasoning and chives and parsley to the parmesan mixture. (A little garlic would also be good but not needed)

Directions

Preheat oven to 400.

Place the grouper fillets on a greased baking tray.

Brush them with lemon juice. In a small bowl, stir together the Parmesan cheese, butter, mayonnaise, hot pepper sauce, salt and pepper. I added Tony Sachers creole seasoning, fresh chives and parsley to the mixture. Fresh thyme would also be good.

Spread parmesan mixture on top of fish.

Sprinkle with paprika

Bake fish for 10 to 13 minutes depending on thickness .

Then broil for another 3 to 5 based on thickness of fish until browned and bubbly. I used black grouper.
